How can I show an interest in other people’s interests without being patronizing?

I’ve always had very intense interests that I talk about a lot, and one of the things that hurts the most is when someone’s clearly annoyed with me because of it. I really don’t want to make someone else feel that way. When someone’s talking about their hobbies or interests, I try to show my interest (usually by asking questions to prompt them to say more) but I don’t want to come off as patronizing. Are there any good ways to show my interest without treating someone like a child? Thanks!
