In the States at least, we seem to just be severely lacking people who know how to cook well and are paid well to do it. No one becomes a cook to make money, because it doesn’t make money unless you’re a rare celebrity like Gordon Ramsey. There aren’t many generational restaurants and many have been closing down. Our restaurants tend to be large chain ones, where people come to work for short times to get some money and then leave – the food itself isn’t good quality. There *are* great restaurants and we also have a lot of food option diversity just it’s not super common to find amazing places that maybe a family owns or something.

As far as I’m aware, smaller family restaurants with a lot of history are much more common in Europe? I know everyone goes there and raves about the food at least. If it’s true, how are they able to stay open?
