  1. My mother’s Swedish Meatballs – very decadent so I don’t make them often, but if I want to surprise someone that I can indeed cook, that’s one I’ll do!

  2. Fried rice is a joy to make. Infinite permutations, a great way to clean out the fridge, and incredibly satisfying to make. It’s fast, furious, and fun.

  3. Hot roast beef sandwiches.

Long rolls (1.5 per person); Sliced roast beef from the deli (1/3 lb per person); au jus sauce (enough to cover the beef); provolone cheese (1/8 lb per person)

In a pot add the au jus sauce, place the beef in the sauce one or two slices at a time (keep a couple slices out incase you have a picky eater). let heat. place cheese on roll, broil for 4 min; place beef on cheesy roll.

    Alternatives:

1, Place beef directly on the roll, and then the cheese on top. This allows for a drippy soggy roll, which many like.

2, add seasoning to the au jus sauce: Garlic, black pepper, hot sauce, really anything

3, steam broccoli rabe or spinach and place on rolls

    PROS:

It is possible to got all the ingredients in almost every single grocery/deli I have ever been in, so it is available when traveling.

Once you get home, from door to table the whole thing takes less than 10 min.

Clean up is one pot and one baking sheet (if you don’t broil the bread, you don’t need to clean the baking sheet.

Easy enough to make alternatives, different cheese, no gravy, different bread, etc…

  4. Baking; specifically baking bread. There’s a bit of “mad scientist” about it, and the house smells great when it’s in the oven.

  5. Curry goat. My favourites are Jamaican, Trinidadian, and Guyanese (although in Guyana they call the dish goat curry)

I also love making crispy pork belly. Both Chinese (siu yuk) and Italian (porchetta)

  6. Slow cooked lamb shanks in red wine sauce on a fluffy bed of mashed potato. And I just ate them 😋
