I’ve never heard any cheddar cheese been called “sharp” anywhere but America. Is that how you guys refer cheddar as mature and extra mature? (Or strong and stronger) Or is it a specific type of cheddar?

  1. Sharp cheddars are aged more and develop a bit more bitterness due to peptides. Mild or unlabeled cheddar is a bit less bitter and more sweet.

    While mature is not something I see in labeling here it would probably make sense to equate the two of the difference is aging.

  2. Stronger flavor, in particular the sour or bitter notes in the cheese. In specific with Cheddars it is for the longer aged cheddars which are more bitter than the younger ones.
