Nothing really beats warm smoked [garfish](https://en.wikipedia.org/wiki/Garfish)!
But as a more casual option, fried [flounder](https://en.wikipedia.org/wiki/European_flounder) is also glorious! It does not [look](https://p.ocdn.ee/54/i/2021/8/3/5va3f1vz.5zc.jpg) that special, but man, I could eat this forever. Just add some fresh early potatoes, boiled, with sour cream and it’s all you ever need.

But it’s not really unique to our area, as its natural habitat is quite world-spanning.

Rainbow trout, fresh out of the water, clean it, put on pan with bacon, cumin, pepper, salt and paprika.. slice of bread, simplest recipe is always my favorite.
