I’ve been hanging out one of one with an ex coworker and we’ve been getting on super well. I think he likes me but it shy and scared to make a move so I think I’ll have to be the one to do it.
I don’t want to be too forward in case I’ve misread that he’s into me and it makes things awkward, because I truly do value our friendship.
I’ve started doing the touching his shoulder while laughing but I’m not sure how else I can make it clear that I like him sexually and want to move things forward.

Someone will have to do something that doesn’t come with 100% plausible deniability. There is no way around that.
If he is shy…you will probably have to tell him what you feel. Signals often don’t work with introverted people. The question is, do you value that attraction enough in order to maybe risk ruining a friendship if he isn’t interested?
Why not straight up tell him you find him attractive?
At then end of your next date, ask if you can give him a kiss, and if he says yes, kiss him on the cheek.
