Ok, so I have this one co-worker that I have a crush on and sometimes I see her giving a lot of mixed signals to me this time when I went to ask her about something work-related and she went somewhat speechless like she was nervous or thinking about thing A while she was meaning to answer to me about thing B. After she was mumbling/quiet on her first for like few seconds another co-worker (girl) said “you took long to answer/talk”. This mutual co-worker even said it in a way that kinda indicated that she knew something so it hit me there that is this one of those cases where she knows. In our work, we don’t ever talk about dating or liking someone or whatever and 99% of the talk is about work-related. I’m kinda 100% sure too that if she had a crush on me she would never admit it to someone else bc she’s that type of shy girl. So is it easy for girls to see or notice if another girl likes a guy?

Not necessarily, unless she makes it incredibly obvious but there’s really no simple “yes” or “no” answer to this.
Signals, kinda, almost… Those are not exactly facts and more your view about what’s happening.
What are those “mixed signals”?
