  1. i wasn’t diagnosed with celiac but i had a really bad gluten intolerance for a couple years (it’s not that extreme now). i think the biggest hassle was breakfast because wheat was in almost everything. i switched to gluten free bread (actually tastes pretty nice when toasted) with either peanut butter or avocado on top, or sometimes with a fried egg/omelette.

with other meals, it’s not too difficult, i mostly eat foods with rice, meats, veggies, gravies/curries/lentils and i typically substitute for gluten free options when i occasionally eat pizza (it’s a little more expenny though).

  2. I have celiac disease and was diagnosed when I was 8 – I am 27 now. These days it’s much easier to get good gluten free substitutes such as bread and pasta and cereals and biscuits/cake etc, gf food has come a looong way over tj last decade or so. Only thing is, some of the good substitutes can be very pricey. I tend to eat a lot of gf pasta with sauce and veggies, fruit, yoghurt, curries and rice, fish, potatoes, peanut butter, chocolate, cheese, houmus, olives etc. And then will maybe buy a loaf of gf bread if I fancy it for toast and sandwiches

  3. Oof here we go … Proteins are free ☺️ asian food can be tricky, soy sauce is made from wheat :/ so count that out. McDonald’s big no no, even the fry’s( they bath them in a wheat/beef broth bath). You may do taco bell (steak substitute only) not the beef :/(same wheat issue) nachos or crunchy tacos and/or there gross protein bowls. Count Arby’s out too… The protein bowls at taco time and chipotle are ok… So protein is free and veggies and fruit. So what we are missing is all the glorious carbs … My favorite bread is ener gy select sourdough or shar bread products … The best macaroni is breechers gf “world’s best” Mac and cheese. Pizza is hit or miss small mom and pops are the best. But for frozen … DiGiorno’s gf if you can find it or fressheta … The Udi’s gf she’ll is the worst, but better than idiots making cauliflower crust for a diet!?!? It’s an autoimmune disorder ffs! Coconut macaroons for a treat! And dryers butterfinger ice cream ftw. … I love food hate this disorder. I should add some mentions. Gf soy sauce is good. Gluten free Gigi cornbread(recipe, I have the original) is the best. Substitute gf flour 1/1 flour works for bechamel and roux. Gf chocolate brownies are the best. And gf box mix chedder bay biscuits are great. Gf panko bread crumbs are ok too. Brazi bites are the bomb. Literally ama. 😂

  4. Gluten intolerant for nearly a decade but not celiac.

    Breakfast:
If it’s a quick one, yogurt, fruit, oatmeal with berries or jam, or scrambled eggs. Those types of things.
Full breakfast for me usually looks like fried or baked potatoes, sausage or bacon, fruit, eggs.

Lunch and dinner are pretty interchangeable. I usually just have leftovers for lunch. My habits change, but I do a lot of soups and stews in the winter. Rice, potatoes, fresh veggies, meat are common for me. Sometimes I’ll do curries. I moved abroad a few months ago, so my cooking is slightly different. At home I did a lot of roasted veggies (excellent made into a salad like bowl with kale), big one pan meals in casserole dishes (rice/pasta with chicken, broccoli with cheese in a cream sauce).

My favourite meal before I left home was roasted chicken in a cream sauce with fresh foraged mushrooms (was harvesting chanterelles and winter chanterelles from my property), with rice and steamed veggies, usually broccoli and carrots. I was also sautéing fresh chard from my mums garden and topping it with my own pickled red onion.
