After a little while she seemed to gain composure but she had really cute rosy cheeks for a little while. We ended up walking in the same direction for about 10 minutes and had a really natural personal conversation I thought. We haven’t talked much since because I haven’t ran into her but do you think she might be interested or just shy?

She might have been blushing because she just farted right because you walked over, or because you’re a known weirdo, or because she has social anxiety, OR because she thinks you super attractive and her dream is coming true. It’s impossible to say.
Walking in the same direction doesn’t mean she likes you, especially if she didn’t change directions/plans just to walk with you. Having a conversation that isn’t awkward also doesn’t mean she likes you. Sometimes people are even more awkward around people they find attractive.
What I will say, is that it sounds like you behaved appropriately. I just hope you had an actual reason for approaching her other than an obvious intention to flirt. Other than that, you nailed it. Now play it cool. Don’t immediately approach her next time you see her. Be relaxed about interactions, even if you’re thrilled and just dying to talk to her again.
