You can try asking them to go more in depth of their opinion if you don’t have one on a topic.
I work in a gallery and sometimes the conversation goes:
“Wow, [Artist] is uses yellow really well in this landscape.”
“Oh yeah, I like the way he [artsy observation]. That reminds me of this one painting I saw online. It has a weird backstory…”
Boom, conversation. If you can’t add anything to the current topic, connect the topic to something you can work with (“that reminds me” or “I heard a story about…”) or just remix the first statement with your own take.
