Black bean & sweet potato tacos
Vegetarian spaghetti bolognese is so incredibly dope!
Palak paneer. Or a falafel pita sandwich from my local Mediterranean place.
Vegan chicken alfredo. The chicken is the easiest tofu recipe ever (press it, slice it, marinate in tofu, bake), and the sauce is cashew-based!
This Taco place by my job has this vegan fried avocado taco and it is so good
Vegetable pakoras
Pizza
Anything vegan. Vegan lasagna, seitan recipes, garlic and sesame tofu with rice, bowls (with whatever veggies, beans, grains, greens, vegan sauce is in my fridge).
Greek salad.
Taco salad. Basically lettuce, tomato, black beans, cheddar cheese and fried tortillas. You can add avocado of course.

I have several: Mac and cheese with broccoli florets and Mindful Chik’n, malai kofta, eggplant Parmesan and this morning I made a new favorite breakfast sandwich: folded Just Egg with cheese and Tofurkey slices inside a buttery croissant
Grilled cheese and tomato soup…I’m not a vegetarian so this is the only meal I’ve ever eaten without meat

Sesame or general tao tofu with sauteed veggies.
Tofu with cucumber kimchi. It’s what’s for dinner.
Mixed greens with cucumber, tomato, carrot, avocado, red pepper, feta cheese, hard boiled egg and either Thousand Island dressing or balsamic vinegar
Tomato soup and grilled cheese.
This sesame tofu with peanut noodles[sesame tofu with peanut noodles](https://nerdswithknives.com/sesame-peanut-noodles-baked-tofu/) is amazing! I put in less water than they suggest to make the peanut sauce a little bit thicker.

I love hummus and baba ganoush with sliced veggies, warm pita bread, and olives that I get from a local middle eastern market. I also make a grilled veggie pizza that my son will ask for about half the time that I make pizza at home.
Tofu pad thai!
can’t go wrong with pizza, tomato soup/grilled cheese, mac and cheese, but if you’re looking for something different – pasta primavera is great!
Shakshuka… made it for the first time the other day and it was great… eggs poached in a spicy tomato sauce. Anything with eggs is good really

Baba ghanoush with pita, falafel, and heaps of onions.
I don’t know what is it called and I’m sure I’ll get nailed to the wall for this but potato curry.

Mashed chick pea and avocado sandwich. Add green onion, cilantro, lime juice, salt & pepper! It’s really easy to prep the mix in bulk and then make sandwiches throughout the week. I usually toast wheat or rye bread.
Avocado toast. My son made it for me once and it’s so good that I eat it at least twice a week.
Am a pasta person 😋 There is this creamy sausage pasta (made with rigatoni and vegetarian sausages from a popular supermarket) that I have recently loved making.
I also like spinach and ricotta cannelloni. Vegetable lasagna.
There was a soup brand that used to do a Butternut squash, apricot and ginger flavour (long since discontinued but I attempted to make up my own 😂)
I did the Daniel fast during Lent a few years ago and have a small bank of recipes for things I was making during that time.
