Mostly just have a calm and warm tone, throw in a hug as well.
Tho don’t worry about sounding like an asshole. When you receive an apology, most of the time the person expects you to be angry or annoyed, otherwise there wouldn’t be an apology in the first place.
Accepting an apology doesn’t mean you have to pretend everything is fine or be a dick about it. You can acknowledge the apology sincerely by saying something like, “I appreciate your apology, thank you. It takes courage to admit when we’re wrong.” This way, you’re accepting the apology without dismissing the reason behind it or being cold.
“Thanks, I appreciate you saying that.”
