They definitely happen but they’re not like a weekly event in every city or something. Just search for “demolition derby, Texas” and if there’s anything you’ll find it.
You’d have more luck in a local sub
Also (at least where I’m from) December isn’t really the month for derby’s. That’s a much more spring/summer type activity.

No idea where you’d find a demolition derby but they seem like the kind of thing that are probably organized at local levels. Maybe try a Google search for “demolition derby club near me” ?
The dirt tracks and such I used to go to for that sort of thing are closed this time of year, most of them pick back up around February or March. It’s a weather/early dark thing.
There’s a drag stip called Yello Belly that does Thursday nights if you just need a motorsports thing.
Check county fair events. Every county fair I have ever been to has a demo derby night.
They do happen and they are fun as hell.
Last one I went to was in the Chicago area. Google it and see if you can find one.
Just FYI… in your search don’t eliminate stuff like figure 8 racing, RV racing, trailer racing… etc. ..
