Guys, how common is it to date someone you’re not already friends with?

I read a lot of "Date right off the bat", "don't try to be friends first", "that will get you friendzoned". I really don't understand. So people mostly date strangers? Is it really that common to ask someone you just ran into out, even though you have no idea who they are? How does all this work, exactly, guys?
