How do you manage multiple interests within the talking stage?

I (24m) just got back into dating after a fairly long relationship. We flew through the talking stage and almost dated immediately. But now that I am back into dating I am struggling to understand how people are able to talk to multiple people at once. I have an interest in two girls atm but I am very unsure as to if I should drop one or keep talking to them both incase one doesn't work out. Thanks in advance.
