Which Stansted transfer option?

I have elderly family coming in at Stansted Airport next week travelling to South east London, is it better to pre-book a cab or is it better to hail Uber from there directly (in terms of cost and waiting time)? They have limited mobility, how far is the walk to the designated uber/cab pickup area assuming there is one? Or can they be picked up near the exit?
