I will be going to Beauty Essex in Vegas with my brother and some of his friends in July. While looking at the website I realized the menu’s dishes are designed to be shared, and a good amount of them contain meat (I am a vegetarian). I am a relatively picky eater and always prefer ordering a dish just for myself. Would it be rude to ask to order separately from the rest of the group? I don’t want to embarrass my brother.

Talk to your brother before you go and ask him what he and his friends would be okay with. Alternatively, just don’t go. If you’re spending money to go to a restaurant, to eat dishes you don’t like… then it’s kinda crazy.
