A quick stir fry / wok. You can use whatever veggies and meat you have, serve with either rice or noodles and add a pre-made sauce or just a simple soy sauce base with some seasoning. The varieties are endless, it’s fairly healthy and I like it a lot.
Chicken skewers or chicken breast, a can of peas and baby carrots, a boiled egg and shirataki noodles. I just pop the skewers/chicken breast in the oven for 15-20 minutes – depending in the product – and cooking the noodles and peas/carrots only takes around 5 minutes (so I start working on those 5 minutes before the oven is done baking the meat).
If I’m hungry for some dessert, I just cut a kiwi in half and use a spoon to scoop and eat the inside.
You can’t go wrong with a nice pasta salad.

– pasta with bottled sauce and toss some broccoli through it
– chicken nuggets/tenders with cucumber and tomato

Or beans on toast, if I’m feeling really lazy.
