Because it wouldn’t stay wet. Spit dries extremely fast and just wouldn’t be effective period as lube. Actual lube is made to stay wet and slick through intercourse and even then you may have to still reapply. Spit just doesn’t have proper viscosity.
Not to mention being loaded with bacteria, spit is neither copious nor durable enough to be a safe lubricant. If you need lube, use lube.
HVS-1 is common and contagious, easily transferred from the month to vagina and/or anus. Genital outbreaks are painful. Imagine have a bunch of cold sores on your privates. It a really good reason not use saliva for lube.
